Making Gnocchi With Love

Our housemade Ricotta Gnocchi and magic sauces have been one of Elaia's signature dishes for over 10 years. The original recipe was citrus based but we've modified it over the years as we play around with the sauces.

Our Ricotta Gnocchi Recipe is simple but remember the key ingredient is the 'love' you put into it when you mix, knead, roll, pinch and cook it.

Pour yourself a glass of wine and make it with your favourite person. Have fun!

1kg good fresh ricotta cheese
100g plain flour
salt and pepper to taste

Mix all ingredients until well combined. If ricotta is really moist add more flour to bind.

Sprinkle the surface with flour.  Divide dough into two portions. Roll each portion to desired thickness to form a log.

Using a knife cut log into 2cm pieces. Give each piece a little pinch to form shape and place on floured tray. Make sure there is space between gnocchi.

When all dough is cut into pieces and placed on tray, refrigerate for 10 minutes so they can firm up.

Bring water to boil and blanche in batches. It should only take around three minutes or until they reach the top of the water.

Use slotted spoon to transfer cooked gnocchi to iced water. This will stop them from overcooking.

They are now ready to be cooked with your favourite sauce. Try pan frying with a little oil or butter as it gives the gnocchi a golden colour and buttery taste.

The successful applicants will undergo our In-House Training and Induction to become our core Front Of House Team for 2016.

Eat, Drink and Run For A Wish

This year Elaia Cafe are one of the proud sponsors for Run For A Wish Launceston.   In addition to the support of their major event held in October this year, we will be holding our own Elaia Cafe in house fundraising events. 

Our target is to raise $15,000 for Run For A Wish Launceston. 

How Are We Going To Raise $15,000?   By eating and drinking of course!  Every day of every week beginning 1st June and ending 31st October will be a fundraising day.   We have come up with a theme for each day of the week. 

Monday Pizza & Pasta Night  Feel less guilty eating those carbs knowing 10% of sales of pizza, pasta and risotto, eat in or takeaway will be donated to Run For A Wish. [available every Monday 5.00pm to 8.00pm]


Tuesday BYO for a Wish Night  Elaia maybe a fully licensed cafe but I couldn't resist the idea of BYO for Run For A Wish.  Between 5.00pm and 8.00pm on a Tuesday night, bring a friend or two and your own bottle of wine to enjoy with your dinner.  Corkage of $10 per bottle will be donated to Run For A Wish. TIRAM-EASTER

If you're already over chocolate Easter Eggs, then let the kids enjoy them and for the more developed palate, you will want something more refined and why not?  You deserve it.   Top off your Easter with this perfect dessert.   The Tiramisu.

As an Easter treat for you, we are sharing our recipe.    This is the original recipe that we have been using at Elaia for the last 20 years.  It has been tweaked along the way but we think this recipe is a winner!  We hope you enjoy making it and eating it as much as we do.  

INGREDIENTS

Coffee Mixture

  • 450 mls strong black coffee
  • 3/4 cup castor sugar
  • good splash of Kahlua
  • 1 packet of Savoiardi Sponge Finger Biscuits

Cream Cheese Mixture

  • 150g softened cream cheese
  • 600mls cream
  • 1/2 cup castor sugar

Cocoa Powder for dusting

METHOD

Combine the coffee, 3/4 cup castor sugar and Kahlua.   Allow to cool.

Beat the sugar, softened cream cheese and the cream until well combined. 

Dip the biscuits in the coffee just enough to cover.  Do not soak.

Cover the base of a small baking dish with a layer of biscuits.  

Cover the biscuits with a layer of cream cheese mixture. 

Dust cream cheese layer with cocoa powder.

Repeat layers until top layer is Cream Cheese mixture.

Dust generously with cocoa powder.     Refrigerate before serving. 

Decorate with chocolate ganache and cream quenelles and dusting of icing sugar.  

HANDY HINTS

Preparation Time: 30 minutes

Refrigeration Time before serving: 2 hours minimum.  

If possible make a day in advance before serving as the coffee and Kahlua flavours infuse the biscuits and is more moist.  It also allows the layers to set which looks nicer when serving. 

Don't soak the biscuits in the coffee as it will cause them to go soggy and will fall apart when serving.   Just a quick 'dunk' in the coffee is all that is needed.  

Tia Maria liqueur can also be used instead of Kahlua.

 

DID YOU SAY WINE AND COFFEE?

Love this time of the year when our new Elaia Team members settle in, get to know each other, our guests and also get the opportunity to meet Peter Caldwell, winemaker of Dalrymple Vineyards and Simon Best our Belaroma Coffee distributor.    Anything to do with wine and coffee has to be good. 

Peter Caldwell was our guest speaker at our Team Wine Tasting held at the beginning of March.  Accompanied by Phil Meyer, distributor of Samuel Smith & Negociants they both enlightened, charmed and entertained our team members in all things wine, wine making, tasting and even opening bottles of wine with a cork!

We sampled 12 wines in total – 6 white and 6 red and yes there was a pizza break in the middle because wine always tastes better with food.  

Some of the favourites were the Tasmanian Dalrymple Single Site Bicheno Pinot Noir, Parish Vineyard Riesling, Jansz Single Vineyard Vintage Chardonnay and the Yalumba Scribbler Cabernet Shiraz [sa] got a few votes as well

We had a few laughs at the individual 'tasting notes'.. so don't be surprised if they use them on you when they suggest your next bottle of wine!

Now for the coffee...later that week, our Team Members also had the opportunity for some Barista training.   

Simon our Belaroma Coffee distributor was the trainer for the day and covered all the basics of making espresso, understanding the equipment, grinder adjustment, milk preparation and latte art. 

It was great to see them get back to work excited, enthusiastic and ready to put their Barista skills to the test!
