Eat, Drink and Run For A Wish

This year Elaia Cafe are one of the proud sponsors for Run For A Wish Launceston.   In addition to the support of their major event held in October this year, we will be holding our own Elaia Cafe in house fundraising events. 

Our target is to raise $15,000 for Run For A Wish Launceston. 

How Are We Going To Raise $15,000?   By eating and drinking of course!  Every day of every week beginning 1st June and ending 31st October will be a fundraising day.   We have come up with a theme for each day of the week. 

Monday Pizza & Pasta Night  Feel less guilty eating those carbs knowing 10% of sales of pizza, pasta and risotto, eat in or takeaway will be donated to Run For A Wish. [available every Monday 5.00pm to 8.00pm]


Tuesday BYO for a Wish Night  Elaia maybe a fully licensed cafe but I couldn't resist the idea of BYO for Run For A Wish.  Between 5.00pm and 8.00pm on a Tuesday night, bring a friend or two and your own bottle of wine to enjoy with your dinner.  Corkage of $10 per bottle will be donated to Run For A Wish. TIRAM-EASTER

If you're already over chocolate Easter Eggs, then let the kids enjoy them and for the more developed palate, you will want something more refined and why not?  You deserve it.   Top off your Easter with this perfect dessert.   The Tiramisu.

As an Easter treat for you, we are sharing our recipe.    This is the original recipe that we have been using at Elaia for the last 20 years.  It has been tweaked along the way but we think this recipe is a winner!  We hope you enjoy making it and eating it as much as we do.  

INGREDIENTS

Coffee Mixture

  • 450 mls strong black coffee
  • 3/4 cup castor sugar
  • good splash of Kahlua
  • 1 packet of Savoiardi Sponge Finger Biscuits

Cream Cheese Mixture

  • 150g softened cream cheese
  • 600mls cream
  • 1/2 cup castor sugar

Cocoa Powder for dusting

METHOD

Combine the coffee, 3/4 cup castor sugar and Kahlua.   Allow to cool.

Beat the sugar, softened cream cheese and the cream until well combined. 

Dip the biscuits in the coffee just enough to cover.  Do not soak.

Cover the base of a small baking dish with a layer of biscuits.  

Cover the biscuits with a layer of cream cheese mixture. 

Dust cream cheese layer with cocoa powder.

Repeat layers until top layer is Cream Cheese mixture.

Dust generously with cocoa powder.     Refrigerate before serving. 

Decorate with chocolate ganache and cream quenelles and dusting of icing sugar.  

HANDY HINTS

Preparation Time: 30 minutes

Refrigeration Time before serving: 2 hours minimum.  

If possible make a day in advance before serving as the coffee and Kahlua flavours infuse the biscuits and is more moist.  It also allows the layers to set which looks nicer when serving. 

Don't soak the biscuits in the coffee as it will cause them to go soggy and will fall apart when serving.   Just a quick 'dunk' in the coffee is all that is needed.  

Tia Maria liqueur can also be used instead of Kahlua.

 

DID YOU SAY WINE AND COFFEE?

Love this time of the year when our new Elaia Team members settle in, get to know each other, our guests and also get the opportunity to meet Peter Caldwell, winemaker of Dalrymple Vineyards and Simon Best our Belaroma Coffee distributor.    Anything to do with wine and coffee has to be good. 

Peter Caldwell was our guest speaker at our Team Wine Tasting held at the beginning of March.  Accompanied by Phil Meyer, distributor of Samuel Smith & Negociants they both enlightened, charmed and entertained our team members in all things wine, wine making, tasting and even opening bottles of wine with a cork!

We sampled 12 wines in total – 6 white and 6 red and yes there was a pizza break in the middle because wine always tastes better with food.  

Some of the favourites were the Tasmanian Dalrymple Single Site Bicheno Pinot Noir, Parish Vineyard Riesling, Jansz Single Vineyard Vintage Chardonnay and the Yalumba Scribbler Cabernet Shiraz [sa] got a few votes as well

We had a few laughs at the individual 'tasting notes'.. so don't be surprised if they use them on you when they suggest your next bottle of wine!

Now for the coffee...later that week, our Team Members also had the opportunity for some Barista training.   

Simon our Belaroma Coffee distributor was the trainer for the day and covered all the basics of making espresso, understanding the equipment, grinder adjustment, milk preparation and latte art. 

It was great to see them get back to work excited, enthusiastic and ready to put their Barista skills to the test!

What a fantastic month we've had so far with our fundraising for BOFR.   Pink Cupcakes,  No Peeking Envelopes, hefty donations made in the BOFR donation box.  Thankyou to all for your generous support! 

But it's not over yet!  Now in our last week, we are commencing our Set Menu Fundraiser which runs all of this week for lunch and dinner.   

20% from the sale of each Set Menu will be donated to BOFR proudly supporting the National Breast Cancer Foundation.   You can enjoy 2 courses for $50 or 3 courses for $60.  Make sure you bring your appetite with you!

Elaia Legends 2015

Meet our legendary Elaia Team for 2014.   As the year draws to a close, the time has come for some of them to move on and fulfil their lifelong ambitions.    You may already see them around as a nurse, teacher, architect,  horticulturalist,  PR & Marketing expert and perhaps there is a future diplomat in there as well.   

This generation of Elaia legends has seen us through a great year of growth,  learning, empathy and establishment of Values and a Workplace Culture that is unique to Elaia.   

As some will move on, they have paved the way, set the standard and raised the bar for the next generation of legends.

We are now recruiting Elaia Generation 2015. 

The successful applicants must have proven Barista, Sales, Hospitality and Leadership experience.    Must be able to commit to weeknights and weekends.   Must hold current Tasmanian RSA.

The successful applicants will undergo extensive training to become our core Front Of House Team for 2015.   Availabilities during December/January essential. 

This position will suit those who are completing studies in 2014 with the flexibility of working extra hours during 2015.

They are the words of Nicole Darcey after their mammoth fundraising efforts held at Clove in Launceston and Smolt in Hobart last month. 

The beautiful Nicole approached me in August this year to see if I would consider using our No Peeking Envelopes to assist with their fundraising event held in September/October.  How could I say no?  Nicole's enthusiasm, motivation and passion for BOFR was electrifying!   I was mesmerised by her story and inspired by her courage and determination.  I couldn’t resist and said YES YES YES!!  

For the month of October which happens to be Breast Cancer Awareness month, we will be redeeming the Special Edition BOFR No Peeking Envelope.    If you are lucky enough to have one, we look forward to seeing you for dinner soon. 

We are also running later this month our Special Set Menu from which 20% of total sales will be donated to BOFR.   In addition, our chefs will be making special pink yummy treats from which the total sales will also be donated to BOFR.

It Seemed Like A Good Idea At The Time

Cast your mind back to when cargo pants were a new idea and a record with a naked baby on it had just come out…… yep, the 90’s!

"Let’s Open A Café” he said “We’ll Have Fun” he said….
These were the words my husband [and business partner] Perry used to say to me when we operated the Gourmet Terrace Deli [Charles Street] in the early 90’s.     We were already selling freshly made local breads, the best Tasmanian cheeses and smallgoods, bulk bins full of grains, flours, dried fruits and nuts, jars of condiments, sauces and relishes and even had a peanut butter machine!   Why open a café?   [Why indeed?]

Because Perry was bored and wanted to go onto the next level and our deli customers asked for it.   They wanted coffee to go with their wraps and desserts.  They wanted us to remove the bulk bins and replace with tables and chairs.   They wanted to sit outside and drink chardonnay and pretend they were somewhere else even if just for an hour.    

So we did.   We opened a Café and we had fun.  18 Years later we are still having fun.   It’s a kind of fun that only one who is mad enough to work in hospitality for a long time can understand.   

Working in hospitality is a paradox, a dichotomy,  a love/hate, a joy a despair, and a feeling of desperation and abundance all at the same time.   We couldn’t imagine doing anything else. 

That’s why we would love for you to come and share the experience that we have built for you.  Come and experience the passion and excellence that over 20 years of experience and hundreds of thousands of hours of feedback, tweaking and growing our unique offering can provide you.

It’s not just the fashion that has changed, we have too, and like the fashion, we feel that we have changed for the better!

Comfort Food Update

Yay!  It's August and we're on the home stretch of winter!   But we all know it will be comfort food weather for a while yet....

Our Breakfast Club Menu and Blackboard Specials have been a hit this winter.    We will be tweaking our Breakfast Club Menu again next week so you still have the weekend to enjoy the Nutella Pancakes.   Chef tells me the Omelettes are staying so you're safe there. 

As part of our 18th Birthday Celebrations, we will be adding to our Blackboard Specials some of the old Elaia favourites like the Ritsa Pizza and the Toasted Turkish Pida we featured on our menu back in the 90's.  More on than next week.

This Winter Let's Open a Little Earlier and Close a Little Later

This Winter we thought we would open our kitchen a little earlier and close a little later.  Our kitchen is now open from 7.30am to 8.00pm Monday to Saturday and 7.30am to 3.30pm Sunday.   We’re open straight through and offer flexibility with our café style menu during this time.  So if you feel like a Steak at 10.00am or an Elaia Breakfast at 5.00pm, just ask and we may be able to accommodate you.

Honour Your Mum

World Ovarian Cancer Day

It seems like five minutes ago it was Mother’s Day last year and now it’s upon us again!  This is a very special time of the year where you focus energy, attention and love on your mum.  We only get one mum and sadly for some of us, they won’t be with us this year to celebrate this special day.    That is why we (Elaia Café) have chosen to celebrate World Ovarian Cancer Day (May 8th) to honour those families that have lost their mums. 

On Thursday May 8th, Friday May 9th and Saturday May 10th, we are offering a Mother’s Day Set Dinner Menu.  Consisting of 4 courses at $70.00 per head (food only), 20% of the sales of each Set Menu sold to be donated to Ovarian Cancer Australia.   This is a fantastic non-profit organisation dedicated to raising awareness and contributing to Ovarian Cancer research.
