Diving Into December

You may have noticed new faces at Elaia as well as a changing of the guard.  Dylan who managed Dinner service for around 6 years, is now on Breakfast and Lunch service. Jaime and Sarah our other Front of House legends join Dylan in passing onto the next generation their Elaia magic. Our Head Chef Sarah also celebrated her 15 year anniversary working with us. What an epic achievement! Check out our latest Reel on Instagram and Facebook celebrating her last 15 years. I did tear up putting it all together.

On Tuesday we held a Long Lunch for team members that joined us recently. It was a great training day where they got to ‘Eat like a Greek’, ask questions, drink wine, and be served by our senior team members. And of course, experience what it's like to be on the receiving end of Elaia hospitality.

Even after all these years we love the opportunity to welcome the next generation of Elaia newbies. Whilst they are on their 'L's', they may get a little wobbly, but watch them take off once they’re fully trained. And the best part is watching them grow, learn and create a connection with you, our Elaia family.

Daniel also showed our team how to open a bottle of wine with a cork. You may not think it's such a big deal, but the majority of our wines are stelvin capped.  Our young team have never even seen a bottle with a cork so it was a great demonstration, with a Greek bottle of wine of course!

All I Want For Christmas Is Koumozo Ouzo
Our team have been diving into their cocktail making which has been met with a lot of enthusiasm especially as we experiment with our very own Koumozo Ouzo. We have come up with a Koumozo Ouzo Christmas Cocktail which is quick and easy to make at home during the festive season.
​​​​​​​Sugar rim cocktail glass
Mix equal parts Koumozo Ouzo and Chambord
Add sugar syrup
Add ice
Stir 
Garnish with a toothpick with glacé cherries and dried orange and enjoy.

December Kitchen Opening Hours
Leading up to Christmas, full menu on offer at all times with homemade cake, coffee and cocktails.  Starting times will vary closer to Christmas as we open earlier for group bookings.  Keep an eye on socials for opening times so you can sneak in earlier for a coffee. I've loved diving back into service, training and supporting our team and catching up with you all. Admittedly it had been a minute since I hit the floor and wondered where the last 30 years went. Some nights feel like 1996 opening week all over again.  The excitement and anticipation of bookings, spontaneity of walk-ins, managing takeaways. That hospo rush. There is nothing like it in the world.
And it's both a pleasure and privilege to be of service to you.
